You Say Tomato… (9/18/10)

Roasted Tomato Salsa

Lycopene absorption is enhanced when tomatoes are heated, and eaten in combination with fat, making this roasted salsa with healthy olive oil an excellent source of the nutrient, not to mention it is DELISH!

2 pounds small dry farmed tomatoes, stem removed
2 jalapeno chilies, stems removed
1 medium yellow onion, sliced into rings
4 cloves garlic, peeled
1/2 cup cilantro, chopped
1 1/2 Tablespoons olive oil
2 teaspoons apple cider vinegar
sea salt and pepper to taste

Heat the broiler. Lay the whole tomatoes and jalapenos out on a broiler pan or baking sheet and broil for about 5 minutes, until darkly roasted on one side. Flip over the tomatoes and chilies and roast the other side for another 5 minutes or so. Set aside to cool.

Turn the oven down to 425 degrees. On a baking sheet, place the onion and garlic. Roast in the oven, stirring carefully every couple of minutes, until the onions are browned and the garlic is soft, about 15 minutes total.

In a food processor, pulse the jalapenos with the onion and garlic until finely chopped, scraping everything down with a spatula as needed to keep it all moving around. Add the tomatoes and pulse until tomatoes are coarsely chopped mixture is well blended. Stir in the cilantro. Add oil, vinegar and mix well. Taste and season with salt and pepper.
