1/8 cup olive oil
1 tablespoon red wine vinegar
1 tablespoon Dijon mustard
1/2 small red onion, minced
1/2 cup chopped fresh parsley
1 tablespoon fresh chopped thyme
Sea salt and pepper to taste
1 can lentils, drained
Mix together the olive oil, vinegar, mustard, red onion, parsley and thyme, whisk well, and season to taste with salt and pepper. Stir in lentils and refrigerate until service.
